Ciabatta bread is a wonderful bread with crunchy crust, soft, airy and bubbly inside.
This recipe is an amazing recipe, delivering thin crunchy crusted bread with fluffy and airy inside texture.
The ingredients for our reciepe are:
1 kg of flour (2/3 whole-wheat 1/3 white)
50 ml olive oil
1 spoon of salt
1 Lt of lukewarm water
40gr yeast
1 spoon of brown sugar
(flour to water ratio is: 100 / 100)
In a bowl we add the yeast, the sugar and 50-100ml of water, we mix and set aside for 20 minutes till the flour is fermented.
In a large bowl, we add the fermented batter, to the rest of the flour, and the rest of the water and we knead by hand, then we add the olive oil, we we let it stand for 30 minutes.
With a bit of flour, we dust our hand and form buns shapes, ensuring to trap all the air inside, and place in a baking tray.
We let it stand for 30-45 minutes, then we bake in the oven at 180c for 25-30 minutes.
Once done, we let them cool down and then we enjoy with flavored butter and garlic.
