Chinese hot chili oil 油潑辣子 Easy and Quick Vegan Condiment

►This classic Chinese hot chili oil is an amazing all-purpose condiment that you can add to any type of your dish, no matter Chinese or not, like dipping sauces, salads, noodles, stir-fries, soups, etc. Plus, it’s vegan! It is only mild to medium spicy, but full of aroma. It’s very quick and easy to make in your own kitchen, no fancy cooking skills required.

Ingredients:
1. 1/3 cup (30g) Chili flakes
2. 1/3 cup (30g) Chili powder
3. 2 tbsp (15g) Sesame seeds, roasted
4. 20g Ginger
5. 1(30g) Green onion
6. ½ cup,(30g) Red Onion
7. 1,¼ cup (300g) High smoke point cooking oil
Seasonings:
1. 2Star anise
2. 1 tbsp (3g) Sichuan peppercorn
3. 1 (3g) Cinnamon stick
4. 2 Bay leaves
5. 1 Black cardamom
Instructions:
1. Add 10g oil to chili flakes, mix it well.
2. Add 10g oil to chili powder, mix it well.
3. Put 1,¼ cup (300g) cooking oil in a medium sized sauce pan, turn the heat to medium-low. Heat up the oil to about 110-120 ℃. Or check it with wooden chopsticks. When you see little bubbles showing around the chopsticks, it's ready.
4. Ginger, chopped green onion, sliced red onion, Star anise, Sichuan peppercorn, Cinnamon stick, Bay leaves, Black cardamom in the oil to fry for about 10 mins, or until the green onion and red onion turn golden brown. Then take them all out to get clear oil again.
5. Turn the heat up to medium. Bring the oil temperature to about 140-150 ℃. Then turn the heat off, and leave the pot on the stove.
6. Put in white sesame seeds, fry for about 1 min, or until they turn to a light golden colour.
7. Then put in the chili flakes, stirring for about 30 seconds to prevent it gets burned.
8. Then put in the chili powder and keep on stirring for another 30 seconds or until it is all well combined.
9. Take the pot off the stove. Transfer the hot chili oil to a bowl to cool it down completely.
10. For storage, you can put it into a glass jar, seal it, and put it in the fridge. it can last up to 3 months.
