(recipe follows) A Japanese comfort food, Ochazuke is rice soup made with tea. In its simplest form, ochazuke is just green tea poured over rice but with countless toppings -- and by changing the types of tea and the variety of rice -- ochazuke is the base for personal creativity.

In Japanese, Ochatuke literally means to pour tea over rice, but it is so much more. The idea is that you layer the flavors you want with the tea you have, so there's no fixed recipe. In the video I made the following combinations:




Ume Ochazuke
1/2 cooked white rice
1 teaspoon toasted sesame seed (for fragrance)
1 umeboshi (pickled plum) for sweetness/sourness
1 tablespoon green scallion for flavor
top that bowl off with tea and salt it and you have a simple lunch.

Chicken Ochazuke
1/2 cup white rice formed into an onigiri and grilled with soy sauce and mirin
1 tbs scallions
1 tsp toasted sesame seeds
a pinch of wasabi for bite
salt to taste
hojicha (roasted green tea)

Salmon Ochazuke
1 cup white rice
1 piece salted salmon
1 tbs scallions
Genmaicha (brown rice tea) so the bits of toasted brown rice flowed into the soup.

Brown Rice Mushroom Ochazuke
1/2 cup brown rice cooked with mushroom stock
2 tbs chopped miso leaves
1 tsp sesame seeds
1/4 cup crushed rice cracker
freshly made dashi

Ochazuke is a base for you to play with. It's really easy and much better for you than most other "fast foods".
