Here, Jay shows how to cook a simple broccoli carrot curry. In this demonstration, the quantity produced provides enough for 5-6 servings.
The combination of healthy vegetables (broccoli, carrot, onion, and tomato) and spicy gravy / broth goes well served over a bed of warm rice.

Ingredients (quantities are approximate)
2 1/2 cups broccoli, washed and cut into mid-size pieces
1 1/2 cups carrots, washed and chopped into thin sticks, 1-2 inches long
1 cup onion, sliced into small pieces (but not too finely chopped)
2 tblspoons finely chopped / minced garlic
1 1/2 medium tomatoes (or 1 large tomato), washed and diced
3/4 - 1 cup fresh cool water
cooking oil (avocado oil recommended)
(optional - soy sauce; apple cider vinegar OR lemon juice - only a dash of each)
spices listed below:
1 - 1 1/2 tablespoon salt
1 - 1 1/2 tablespoon black pepper
1 1/2 tablespoon garam masala powder OR curry powder OR coriander powder
1 tablespoon red chili powder
