The cupcakes:
INGREDIENTS
280gr. all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
240 ml. plant based milk (soy)
15 ml. apple cider vinegar
150 gr. granulated sugar (turbinado, demerara)
115 gr. unsalted butter, softened
1 teaspoon pure vanilla extract
The frosting:
INGREDIENTS
100gr. dark chocolate
50gr. Milk chocolate
130gr. unsalted butter, softened
130gr. mascarpone
1tsp pure vanilla extract
¼ teaspoon salt
130gr. powdered sugar
15-20ml plant milk
Top the cupcakes with ground toasted hazelnuts and orange zest.
