Replacing a 6510 with a 6502 isn't a direct swap. The adapter from Monotech Vintage PCs (https://monotech.fwscart.com/) makes this possible, however, not all 6502 processors are created equally. Timing is everything on the C64 bus and some cartridges like the Kung Fu Flash are very sensitive to timing tolerances. There's clock issues with some versions of the 6502 processor that we'll need to overcome. So come have a look at some hacky work arounds to make this system stable.
EDIT: Based on some feedback, I'd like to add this disclaimer before you watch this video...
DISCLAIMER: This video is not intended to be a 'how to' or an end to end solution. I made this video to highlight some of the challenges I ran into and how I worked around them on this particular machine that I use for tinkering and development. In the future I hope people can use this info to learn from, make their lives easier in some way, and/or develop a polished end to end solution for a similar problem. Please be careful and don't fry your machine!
Also, while I believe this video to be informative, this video is in fact long and features some repetitive boring test cycles. There's roughly a week's worth of work condensed down into ~50 minutes. I am not forcing anyone to watch this video. I make these videos for fun and to help me remember, because my memory is half shot. If you are unwilling or unable to watch this video due to it's length, you have my sincere apologies and may I recommend you click on something that more meets your attention span requirements.
