You can only do one every 24 hours if you want to use gems or you can do unlimited ones with "Secrets of the Stone" which uses 3 Spirits of Harmony. I never used my Spirits for JC as I had better use for them on Leatherworking but if JC is the only profession you can use them on , then by all means , use them and get them recipes faster.

For the next part you'll need "LilSparky's Workshop" add-on and the "Auctionator" add-on which will help you see what's gonna make you some profit.

If you decided to take JC as a profession then you already know most of your gold will be made by cutting gems. After you discover most of the recipes , you can do a quick scan of the auction house with 'Auctionator' and then Lil'Sparky will show you if the mats cost less than the final product. As you can see in the photo on the right side , Lil'Sparky will display the mats price on the right column and the final product price on the left column. With the help of this great add-on you can start making more profit knowing which gems to cut.
