Hi Everyone! Soup season is upon us. To celebrate the change in weather, nothing better than a hot bowl of soup. I created this dish after having leftover poblano peppers. You can substitute any of the veggies or even the quinoa for white rice. I hope you enjoy!

Ingredients for Soup:
2 Poblano peppers
2 Jalapeños
Onion wedge
3 garlic cloves
2 Mexican zucchini (calabaza)
2 carrots
2 small Potatoes or 1 medium to large potato (diced)
1 cup dried quinoa (washed)
Veggie stock/ or water
Avocado chunks
Ingredients for Albondigas:
1 cup of cooked white rice
1 cup of cooked lentils
½ cup panko
½ cup breadcrumbs
1 calabaza finally diced
1 tbsp cumin
1 tbsp nutritional yeast
2 garlic cloves and onion wedge (sauteed separately)
3 tablespoons of flax seed mix
Optional: vegan bouillon
Flax egg (combine 2 tbsp flax seed and ⅓ cup water mix and refrigerate for 10 min)
