What’s Cooking in Esther’s Kitchen- Dorito Fried Tofu

This is without a doubt our favourite tofu recipe EVER! Crushed Doritos give the tofu a crazy flavourful crunch that is going to knock your socks off. It's probably one of the easiest things we’ve made, too. You're going to love this!

Esther's Favourite Dorito Friend Tofu.
Makes four servings.

Ingredients.
-1 350g (12oz) block of extra firm tofu
-2 cups Sweet Chili Heat Doritos
-1 tbsp of chili powder
-1/2 cup all purpose flour
-1/2 cup of soy sauce
-4 tbsp vegetable oil

Preparation:
-Heat your frying pan to med-high and add 4 tbsp of cooking oil.
-Press tofu to remove excess water and cut into slices 1/2” thick, then press again to remove any remaining excess moisture.
-Crush the Doritos (or the chip of your choice) using a potato masher, or, place them in a plastic bag and crush them by hand until you have a texture similar to panko bread crumbs. Don't over do it, you want some nice size Doritos chunks in the mix. (Think extra large panko bread crumbs.)
-Add the chili powder and flour to the crushed Doritos.
-Dunk the tofu slices into the soy sauce, making sure to cover all sides, but move quickly because the tofu will absorb the soy as it sits.
-Remove the tofu from the soy and place it into the dorito mixture. Press firmly to evenly coat all sides of the tofu with the mixture.
-Place the coated tofu in the heated frying pan and cook for 4 minutes each side, until golden brown. Be gentle when flipping the tofu as you can knock the breading mixture off.
-Serve immediately with your favourite sides and dips.

*Note*
You can cut your tofu into strips and follow the same preparation to make snack sized ”chick’n fingers.” and serve them with an assortment of dipping sauces. They’re perfect for an appetizer at parties or special events.
