These chicken buns are a perfect combination of soft bread and a savoury filling. Topped with sesame seeds and finished with a buttery glaze, they make for a delightful treat anytime.
Ingredients
For the Dough:
2 tbsp sugar
2 tbsp butter, softened
2 ¼ tsp (1 packet) instant yeast
1 cup warm milk
1 egg
3 cups all-purpose flour
1 tsp salt
Chicken Filling:
2 tbsp oil or butter
1 large onion, thinly sliced
2 green chilies, sliced
1 medium carrot, sliced into thin strips
1 cup mushrooms, sliced
2 cups cooked chicken, shredded
Salt to taste
1 tsp black pepper
1 tsp chili powder
2-3 tbsp cream cheese (optional)
A handful of mint leaves, chopped
A handful of coriander leaves, chopped
For Finishing:
2 tbsp milk (for brushing before baking)
Sesame seeds (optional, for garnish)
1 tbsp butter (for brushing after baking)
Step-by-Step Process
1. Prepare the Dough:
1. In a bowl, mix sugar, butter, and yeast with warm milk. Let it sit for 5-10 minutes until frothy.
2. Add the egg and mix well.
3. In a large mixing bowl, combine the flour and salt. Gradually pour in the yeast mixture.
4. Mix until a dough forms, then knead the dough for about 8-10 minutes until smooth and elastic.
5. Cover the dough with a damp cloth and let it rest in a warm place for 2 hours, or until doubled in size.
2. Make the Chicken Filling:
1. Heat oil or butter in a pan over medium heat. Sauté the onions and green chilies until translucent.
2. Add carrots and mushrooms, cooking until softened.
3. Stir in the shredded chicken, salt, pepper, and chili powder. Mix well.
4. Remove from heat and stir in cream cheese (if using), mint, and coriander leaves. Let the filling cool completely.
3. Assemble the Buns:
1. Punch down the risen dough and knead it again briefly.
2. Divide the dough into equal portions (10-12 pieces).
3. Roll each portion into a small circle. Place a spoonful of the filling in the center.
4. Gather the edges of the dough and pinch to seal the bun. Place seam-side down on a baking tray lined with parchment paper.
4. Final Proofing and Baking:
1. Cover the buns with a cloth and let them rest for 20-30 minutes.
2. Preheat your oven to 180°C (350°F).
3. Brush the tops of the buns with milk and sprinkle sesame seeds on top, if desired.
4. Bake for 15-20 minutes, or until golden brown.
5. Finishing Touch:
1. Once baked, brush the buns with melted butter for a glossy, flavorful finish.
2. Allow them to cool slightly before serving.
