Goan Vegetarian Lunch l Goan Sorak Without Onion Garlic l Crispy Vaigachi (Brinjal) Kappa #konkani Goan Spice House
INGREDIENTS
Sorak (Curry Paste):
• Grated coconut – ½ cup
• Dry coriander seeds – ½ tsp
• Dry Kashmiri chillies – 3 to 4
• Dry red chillies – 3 to 4
• Ginger – ½ inch
• Turmeric powder – ½ tsp
• Tamarind – ¼ tsp
• Water – as required
Other:
• Crushed ginger – ½ inch
• Crushed triphala – 5 to 6
• Kokum – 2 to 3
• Green chilli – 1
• Salt – to taste

Brinjal / Eggplant Rava Fry:
• Brinjal / Eggplant – 1 large
• Water – as required
• Salt – to taste
• Turmeric powder – ½ tbsp
• Red chilli powder – 1 tbsp
For Coating:
• Semolina – ½ cup
• Rice flour – 1 tbsp
• A pinch of salt
• Red chilli powder – ¼ tsp
Other:
• Oil – for frying
METHOD / PREPARATION
Sorak (Curry Paste):
1. Grind all the ingredients mentioned above
into a fine paste. Transfer to a pan.
2. Add water to adjust the consistency of the
curry. Add crushed ginger, kokum, and
crushed triphala. Mix well.
3. Cook on medium to low flame for 10
minutes stirring occasionally.
4. After 10 minutes, add salt to taste and cook
for another 2 minutes.
5. Once the curry / sorak becomes slightly
thick in consistency, switch off the flame.
6. The Goan Sorak is ready.
Brinjal / Eggplant Rava Fry:
1. Wash and cut the brinjal into round slices or
any desired shape.
2. Soak in salt water for 5 to 6 minutes to
prevent discoloration and keep it fresh.
3. Drain the soaked water, rinse with clean
water, and drain again.
4. Add salt to taste, turmeric powder, and red
chilli powder. Mix well and apply evenly.
5. Marinate for 5 to 6 minutes.
For Coating:
6. Mix all the ingredients mentioned above.
Rava Fry:
7. Heat oil, coat the marinated brinjal with the
semolina mixture, and fry on both sides over
a low flame until light golden in colour.
8. Once the colour changes to light golden and
the kappa becomes crispy on the outside
and soft on the inside, switch off the flame.
9. Remove onto a plate.

Enjoy Shravan vegetarian lunch with steamed rice, Goan Sorak, Vaigachi Kappa, and pickle.
