This video, while not giving an actual recipe, is showing how to put together an amazing appetizer, hors d'oeuvre, how you want to call it.
As I said in the video, I wanted to give justice to the Anchovy, and I think I did it. It was absolutely amazing!
Regarding the garlic confit. It is just a fancy name for garlic that has been cooked submerged in oil for approximately 30- 40 min. For this recipe you can simply cut the garlic cloves in small pieces and cook them on the stovetop in a little bit of oil and a little bit of water. You don't need to add salt. When the water evaporates you can add more until the garlic is soft. You mash it with a fork and cool down before use. It is ready in a few minutes. You can use onion instead of garlic but, it takes much longer to cook.
The garlic makes the appetizer taste better and also participates in reducing the overall saltiness from the Anchovies.
