Dhuska, also spelled Dhooska, is a popular deep-fried snack or breakfast dish from the Indian states of Jharkhand and Chhatisgarh. It is a savory, crispy, and fluffy pancake-like item made from a batter of ground rice and lentils.
It is traditionally served hot with a side of spicy potato curry, a black chickpea curry called ghugni or aloo chana jhol, or various chutneys and pickles. Some variations in Jharkhand are also eaten with mutton curry.
