the spicing in meghana biryanis is apparent on the palate, but absent on the plate. one sees no hint of any of the spices that have gone into the dish, but you can taste its presence. the masala in the mutton biryani is mellower than in the chicken version, allowing the flavour of the meat to take precedence.
