Mangalore Buns are sweet, fried, fluffy puri like fermented bread made using ripe mashed bananas, sugar, curd and flour. These buns are quite popular and is savoured both as a breakfast item or snack.
Approx. preparation and cooking time: 30 mins
Fermentation time: 8 hours (overnight)

List of ingredients:
1. All purpose flour (maida) - 4 cups
2. Ripe bananas (Preferably Robusta variety) - 2
3. Thick curd - Half cup
5. Baking soda - Half teaspoon
6. Powdered sugar - 1 cup
7. Ghee - 1 teaspoon
8. Oil for frying
Method of preparation:
1. Take a large mixing bowl, peel 2 bananas and mash nicely (use a masher or small cup) to make a smooth paste.
2. Next, add 4 cups maida, half cup curd, 1 cup powdered sugar (can vary as per taste and quantity) and half teaspoon baking soda. Then, mix all the ingredients to make a smooth dough. Cover and keep this aside overnight, for fermentation.
3. Knead the fermented dough gently, grease your palms with ghee and make small balls (add a little flour, if the dough is watery).
4. Dust the board with flour, roll the balls to make small puris and fry them in oil (please ensure heat is on high flame while frying). Flip and fry until the buns turn golden brown. Then, transfer the fried buns onto a large plate.
5. Enjoy fluffy, sweet Mangalore Buns with fresh coconut chutney.
