🥣 Healthy Manchow Soup Recipe (No Fried Noodles)

🥦 Ingredients:
Veggies (finely chopped):
• 1/4 cup cabbage
• 1/4 cup carrots
• 1/4 cup capsicum
• 1/4 cup beans
• 1 small onion
• 1 tbsp spring onion greens (for garnish)
Others:
• 2 tsp ginger-garlic paste (or fresh grated)
• 1 tsp olive oil or sesame oil
• 2.5 cups water or veg stock
• 1 tsp soy sauce (low sodium)
• 1/2 tsp vinegar
• 1/4 tsp black pepper
• 1 tsp cornflour + 2 tbsp water (for thickness)
• Salt to taste
• Optional: pinch of chili flakes or green chili for spice

🍳 How to Make Healthy Manchow Soup:
• Sauté the Base
• Heat 1 tsp oil in a pan.
• Add ginger-garlic paste and chopped onions. Sauté till light golden.
• Add Veggies
• Add cabbage, carrot, beans, and capsicum. Stir fry for 2–3 minutes on high flame (don’t overcook – keep them crunchy).
• Add Liquids & Seasoning
• Add 2.5 cups water or veg stock.
• Thicken the Soup
• Mix 1 tsp cornflour in 2 tbsp water (no lumps).
• Pour slowly into boiling soup while stirring. Cook 1–2 mins till it thickens slightly.
• Final Touch
• Garnish with spring onion greens.
• Serve hot. (You can add air-fried or baked whole wheat noodles on top for crunch.)
