Landlocked English Pineapple Rum: Built from Scratch, Powered by Fire. Ever wondered how we get such genuine, deep caramelised pineapple flavour into our rum? We take you behind the scenes for the whole chef-driven process. We start by making a simple but potent pineapple caramel (burnt sugar and juice). We then prep fresh pineapples, spit-roast them over charcoal fire in the garden, and continuously brush them with the homemade caramel until they are perfectly charred and caramelised. After infusing all that flavour for a week, we strain the fruit and blend the intensely flavoured caramel with our high-strength 72% ABV rum distillate and pure water.
