RECIPE:
🍳 Ingredients (Makes ~15–20 falafels):
For the Falafel:
– 250 g dried chickpeas (soaked for 12h or until doubled in size)
– 1 medium onion, roughly chopped
– 3 garlic cloves
– 1 tsp cumin
– 1 tsp ground coriander
– 1 tsp dried paprika
– 1 tsp salt
– 1 tsp freshly ground black pepper
– ½ tsp baking soda
– A large handful fresh parsley
– Oil for frying (heated to 170 °C / 338 °F)
For the Dip:
– 300 g Greek yogurt
– 1 garlic clove, minced
– Zest of 1 lemon
– Juice of ½ lemon
– Pinch of freshly ground black pepper
– Optional: a handful of fresh mint leaves, finely chopped
For the Salad:
– 1 cucumber, roughly chopped
– 1 red bell pepper, roughly chopped
– 1 small red onion, roughly chopped
– 1 tomato, roughly chopped
– Feta cheese, cubed
– Olive oil, salt, and freshly ground black pepper to taste
To Serve:
– Pita or tortilla slices (optional)
👩🍳 METHOD:
1️⃣ Soak the Chickpeas:
Soak dried chickpeas in cold water for at least 12 hours (or until doubled in size). Drain well and rinse thoroughly.
2️⃣ Make the Falafel Mix:
Add the drained chickpeas, roughly chopped onion, garlic cloves, cumin, coriander, dried paprika, salt, black pepper, and baking soda to a food processor. Add a large handful of fresh parsley.
Pulse until the mixture is well combined and slightly sticky, but still has some texture.
If you don’t have a food processor, use a meat grinder first, and then a hand blender.
3️⃣ Form the Falafels:
With slightly damp hands, shape the mixture into bite-sized balls — not too big, not too small. The mixture should be sticky enough to hold together easily.
4️⃣ Fry the Falafels:
Heat oil to 170 °C (338 °F). Fry the falafel balls for 2–3 minutes until crisp and golden brown. Drain on paper towels.
5️⃣ Make the Dip:
In a mixing bowl, combine Greek yogurt, minced garlic, lemon zest and juice, freshly ground black pepper, and optional mint leaves. Stir well and set aside to allow the flavors to meld.
6️⃣ Prepare the Salad:
Chop the cucumber, red bell pepper, red onion, tomato, and feta into bite-sized pieces. Toss with olive oil, salt, and freshly ground black pepper.
7️⃣ Serve and Enjoy:
Place the yogurt dip in the center of a serving plate. Arrange the falafels and salad around it. Add pita or tortilla slices for an authentic Mediterranean-style feast.
