How to make Sausage 101~with Chef Frank

This is my basic method for making sausage. I purposely did not stuff it into casings because that is a video and technique in and of itself. You can flavor the sausage any way you like but, the method remains the same.
makes about 6 #
5# pork shoulder
1# pork fat
4 cloves garlic
4 tbsp salt
1/2 cup parsley
1-1 1/2 cup dry white wine
1 tbsp chili flake
1 tbsp black pepper
1 tbsp sugar
