Batata w beid (بطاطا وبيض, also known as Mfarakeh/مفركة) is an incredibly comforting Lebanese potato and egg dish with variations throughout the Eastern Mediterranean. In this version, diced onions are slowly caramelized until deeply golden #ClaudettesKitchen
Ingredients:
Potatoes
1 kg of peeled potatoes
Cut the potatoes into square shapes
1 teaspoon salt
0.5 liter of water
On medium heat, when boils turn on low heat and cook for 30 minutes or until the potatoes are ripe, then turn off the heat
After 30 minutes, bring a fork if the fork is well inserted into the potatoes, turn off the heat
After turning off the heat smash the hot potatoes directly
1.5 teaspoons salt
Half teaspoon of all ground pepper (sweet spice)
Half cup of olive oil
Eggs
10 eggs, add water just to reach the edge of the eggs
On high heat, when boils turn on medium heat, and cook for 10 minutes, then turn off the heat
Now throw the boiled egg water, and directly wash well the egg with cold water
