Food brings people together and I was given this burger recipe while traveling in Germany.

Marco's Bone Marrow Burger Recipe:
320 grams of beef neck (meat you use to make pulled beef for example)
60 grams of bone marrow (without the bone)
Have your butcher cut the bones lengthwise
Scoop it with a spoon out of the bone
60 grams of beef fat (brisket cut-offs?)
1 tsp of Cayenne Pepper
1 tsp of Paprika Powder
Salt and freshly ground black pepper
Preparation
Cut the meat in 3/4 Inch cubes
Cut the fat and bone marrow in small cubes
Put the meat, fat and bone marrow in the freezer for 15-20 minutes.
The meat and fat become stiffer so the meat grinder does not just smear it all around and actually grinds. Time depends on the power of your freezer and outside temperature.
Mix the cayenne pepper and paprika powder
Mix one egg to make sure the burgers do not fall apart that easily
Let it rest for 20-30 min in the fridge
Make 4 burgers
Grill the burgers until 52 Celcius core temperature.
Sure you can alter everything to your taste.
Build your tasty burger with bacon, cheese and whatever you like to add. I like to have a little pulled beef too.
