The Chicago Style Pizza you can make at HOME

This is my second run at making a Chicago style pizza. The first time was wayyyy too much sauce. This time, I think it was just right.
This was much easier than I expected, and a pizza i plan to make at home again. It's probably my favorite pizza to date.
Ingredients
Pizza Dough
430 grams of All-purpose flour
23 grams of medium grind cornmeal
9 grams of diastatic malt (can omit if you don't have)
5 grams of yeast
270 grams of water
2 tablespoons of butter (unsalted)
10 grams of sea salt
Sauce
28oz San Marzano Whole Peeled tomatoes
8oz tomato paste
6 oz olive oil
Dried oregano and basil (or Italian seasoning)
Garlic (or garlic powder)
Salt to taste
Pizza
15 slices of deli Provolone Cheese base
Italian Sauce (I used medium, but you should definitely use spicy)
Pepperoni
2 cups of Sauce (homemade)
Parmesan Cheese
Bake at 500 degrees for 12 minutes, rotate 90 degrees, then bake for another 15-18 minutes depending on your oven.
