🌯 Shish Tawook Wrap Recipe (Lebanese-style)
🐔 Ingredients – Chicken Marinade:
500g boneless chicken breast or thighs (cut into chunks)
3 tbsp plain yogurt
2 tbsp lemon juice (fresh)
2 tbsp olive oil
1 tbsp tomato paste
4 cloves garlic (crushed or minced)
1 tsp paprika
1/2 tsp ground cumin (optional for depth)
1/2 tsp ground cinnamon (optional, for Levantine touch)
Salt & black pepper to taste
⏱️ Marinate Time:
At least 2 hours (overnight is best)
🔥 To Cook:
Skewer the marinated chicken (if grilling) or lay flat on a baking tray
Grill or bake at 200°C (390°F) for 20–25 mins, turning halfway
OR
Pan fry on medium-high heat until golden and cooked through (~10–12 mins)
🧄 Garlic Toum (Lebanese Garlic Sauce):
1 cup garlic cloves (peeled)
1/2 tsp salt
2 cups neutral oil (like sunflower or canola)
1/4 cup lemon juice
(Optional: 1–2 tbsp ice water if needed)
Instructions:
Blend garlic and salt until finely minced.
Slowly drizzle in oil while blending, alternating with lemon juice.
Blend until it emulsifies into a fluffy, white sauce.
(Shortcut version: use mayo + garlic + lemon juice for a quick toum-style sauce)
🥒 Wrap Assembly:
Flatbread or pita
Shish Tawook chicken (freshly grilled)
Garlic toum
Pickles (especially cucumber or turnip)
Lettuce, tomato (optional)
Fries (yes, in the wrap = extra amazing)
Wrap it up, toast it on a grill pan or sandwich press if you like it warm and crispy.
