Chocolate Chip Cookies 2 ways – It’s been some time since I last shared chocolate chip cookies recipe. I’ve altered this version slightly. With this version, I’m not searching anymore, and I found this one is far most delicious in the sense that it’s crispy in the outside and chewy in the inside. My kids love marshmallows and they requested to have marshmallows toppings. If you like chewy soft cookies, adding the marshmallow is heavenly. For vegans or vegetarian, you can omit the marshmallows and stick with only chocolate. I’ve decide to use only brown sugar because I don’t like them too sweet, and the sugar is cut down to minimise the sweetness. For the other half, I’ve used chocolate coins as the toppings. Ingredients:
This recipe yields about 17 cookies in total with a cookie scoop size dough.
115g [½ cup] unsalted butter
200g [1 cup] brown sugar
1 egg OR 60g [¼ cup] plain yogurt
1 tsp vanilla extract
180g [1½ cup] all-purpose flour
½ tsp baking soda
180g [1cup + 2 tbsp] chocolate chips
Toppings:
Chocolate coins
Marshmallows
Instructions:
1. In a milk pot, add butter. Place it over a medium heat and cook until the butter is browned. As soon as the butter is browned, off and remove the pot from the heat immediately. Set aside.
2. In a large mixing bowl, add sugar and the melted butter. Mix on high speed for about 1 minute.
3. Add the egg and vanilla extract. Mix on high speed for 1 minute or well combined.
4. Sift in the flour and baking soda. Fold in until combined, do not over mix.
5. Add in the chocolate chips. Fold until combined.
6. Wrap with cling film and refrigerate for about 30 minutes.
7. After 30 minutes, preheat oven at 175°C/348°F.
8. With a cookie scoop, scoop the dough and place it on a flat pan. Place the dough about 2 inches apart.
9. Add the chocolate coin or marshmallows respectively.
10. Baked in preheated oven at 175°C/348°F for 11-12 minutes. I did mine at 12 minutes as I like the cookies a little more brown.
11. Place the cookies on the cooling rack.
12. Let them cool completely before consuming.
