These are delicious cookies that taste like the center of attention is an apple. A friend of mine has apple cookies, and I got to thinking about how I could make it keto, and completely gluten free. I believe these are a winner. If you are allergic to nuts, please use sesame flour. A serving size is 1 cookie, but hey, at 1 carb…. Have 2! Enjoy!
Keto Apple Cookies-

1 1/2 zucchini (peeled and grated) or 2 small zucchini
2t cinnamon
1/2t nutmeg
1c water
1/3 + 1T sweetener
1/4t xanthan gum
Place in saucepan and heat to boiling. Reduce to a simmer for 15-20 minutes (almost like applesauce). Cool for 20 minutes.
3c almond flour
1/2c sweetener
1t baking powder
1t baking soda
Mix dry ingredients. Then add the wet mixture to the dry mixture and mix well. Use small cookie scoop, and place on silicone lined baking pans. Bake at 350 for 20-25, until fully cooked and golden brown.
Store in the refrigerator for 1 week or in the freezer for up to 6 months.
Nutritional information: 1 cookie per serving. Makes 40 cookies.
