Broccoli Chicken Cheddar Soup:
-5T butter
-1/2 cup oat fiber (use 1/3 cup if using flour)
-1 onion diced small
-1 cup water
-3-4 cups broccoli chopped small
-5 cups chicken broth
-6-8 cups shredded chicken
-3 cups shredded sharp cheddar cheese
-2 cups water
-1 cup cottage cheese
-1 cup heavy cream
-1/2 tsp xanthan gum or corn starch
-2tsp garlic powder
-2tsp parsley
-salt to taste
Instructions:
-Drizzle a little oil in the bottom of your pot. On medium heat stir fry onion and broccoli till tender. Remove from pot.
-Lower heat to low/medium. Melt butter in pan. Whisk oat fiber or flour into butter, it will get crumbly. Slowly add in 1 cup water till smooth and mixed well.
-Add chicken and broccoli/onion into butter mixture.
-Blend together cheddar cheese, 2 cups water, cottage cheese and cream in a blender. Once well blended, add in xathan gum or cornstarch and blend a bit more. Add blended ingredients to pot.
-Add garlic powder, parsley and salt to pot. Stir and let simmer on low heat for about 20 mins. Enjoy!
