黑胡椒鸡肉炒面配料:
1. 腌制鸡肉配料:
• 鸡腿肉 300克
• 盐 1.5克
• 白胡椒粉 适量
• 姜汁水 15克
• 玉米淀粉 3克
• 植物油 少许
2. 黑胡椒酱汁:
• 黑胡椒粉 1.5克
• 白胡椒粉 少许
• 蚝油 10克
• 生抽 20克
• 老抽 5克
• 糖 少许
• 水 60克
• 淀粉 2 克
3. 其他配料:
• 面条 150克
• 洋葱 半颗
• 包菜 1/4 颗
• 蒜末 适量
• 食用油 适量
• 老抽 少许
• 盐 少许
• 辣椒油 少许
操作步骤:
操作步骤:
1. 鸡肉腌制:
• 300克鸡腿肉切小块,加入1.5克盐、少许白胡椒粉、15克姜汁水,抓拌均匀。
• 加入3克玉米淀粉,继续抓匀。
• 最后加入少许植物油,搅拌均匀后,静置10-15分钟腌制。
2. 黑胡椒酱汁:
• 在碗中加入1.5克黑胡椒粉、少许白胡椒粉、20克生抽、少许糖、5克老抽、10克蚝油、60克水及2克玉米淀粉,搅拌均匀备用。
3. 煮面条:
• 在锅中烧开水,下入面条,放少许盐,煮至七八分熟。
• 捞出,过冷水,沥干水分,加入少许芝麻油拌匀。
4. 炒鸡肉:
• 热锅冷油,将腌制好的鸡肉放入锅中,中火煎至一面焦脆,翻面继续煎至另一面焦脆,盛出备用。
5. 炒菜和混合:
• 在同一锅中加入洋葱丝,炒至软化。
• 加入蒜末炒香,随后加入包菜,继续翻炒至包菜软化。
• 加入煮好的面条和鸡肉,沿锅边倒入黑胡椒酱汁,翻炒均匀。
• 加入少许老抽和盐,再次翻炒均匀,最后加入灵魂辣椒油。

Ingredients:
1. For marinating the chicken:
• 300g chicken thigh (cut into small pieces)
• 1.5g salt
• A pinch of white pepper
• 15g ginger juice
• 3g cornstarch
• A little vegetable oil
2. For the black pepper sauce:
• 1.5g black pepper
• A little white pepper
• 10g oyster sauce
• 20g light soy sauce
• 5g dark soy sauce
• A pinch of sugar
• 60g water
• 2g cornstarch
3. Other ingredients:
• 150g dried noodles
• 1/2 onion (sliced)
• 1/4 cabbage (shredded, hard core removed)
• Some minced garlic
• Cooking oil as needed
• A dash of dark soy sauce
• Salt to taste
• A little chili oil (optional)

Instructions:
1. Marinate the chicken:
• Cut 300g chicken thigh into small pieces. Add 1.5g salt, a pinch of white pepper, and 15g ginger juice. Mix well.
• Add 3g cornstarch and mix again.
• Add a little vegetable oil, mix well again, and let it marinate for 10–15 minutes.
2. Prepare the black pepper sauce:
• In a bowl, mix 1.5g black pepper, a little white pepper, 20g light soy sauce, a pinch of sugar, 5g dark soy sauce, 10g oyster sauce, 60g water, and 2g cornstarch. Stir until smooth and set aside.
3. Cook the noodles:
• Bring a pot of water to a boil. Add the noodles and a bit of salt. Cook until about 70–80% done.
• Drain, rinse under cold water, and toss with a little sesame oil.
4. Cook the chicken:
• Heat oil in a pan. Add the marinated chicken and pan-fry over medium heat until one side is golden and crispy. Flip and cook the other side until equally crisp. Set aside.
5. Stir-fry and combine:
• In the same pan, add sliced onions and stir-fry until soft.
• Add minced garlic and cook until fragrant.
• Add cabbage and stir-fry until softened.
• Add noodles and cooked chicken. Pour in the black pepper sauce around the edges of the pan and stir everything together.
• Add a little dark soy sauce and salt to taste. Stir again, then finish with chili oil if using.
6. Done!
