Uses of sesame seeds
Sesame seeds are a versatile ingredient that adds a nutty flavor and subtle crunch to a variety of dishes:
Toppings and Garnishes: They are widely used as toppings for baked goods such as bread, bagels, muffins, and burger buns. They also garnish salads, stir-fries, and various Indian and Middle Eastern dishes.
Pastes and Oils: Ground into a smooth paste called tahini, which is a primary component in hummus, baba ganoush, and various sauces and dressings. Sesame oil is a popular cooking oil and finishing oil, especially in Asian cuisines, valued for its distinct aroma and flavor.
Sweets and Snacks: In Indian cuisine, they are mixed with jaggery to make traditional sweets like ladoos and chikkis (brittle) during festivals like Makar Sankranti. They are also used in granola bars and cookies.
Spice Blends and Powders: They are an essential part of spice blends like shichimi togarashi and furikake in Japan, and in various dry chutney powders in South India.
Breading: Finely chopped or ground sesame seeds can be used as a gluten-free alternative to breadcrumbs for coating chicken or fish, providing a satisfying crunch.
Health Benefits
Sesame seeds are a nutrient powerhouse, offering numerous health benefits due to their rich composition of healthy fats, protein, fiber, vitamins, and minerals.
Heart Health: The healthy fats (polyunsaturated and monounsaturated) and compounds like lignans and magnesium in sesame seeds help lower bad cholesterol (LDL) and blood pressure, reducing the risk of heart disease.
Digestion: They are a great source of dietary fiber, which aids digestion, promotes regular bowel movements, and supports a healthy gut.
Bone Health: Rich in calcium, magnesium, phosphorus, and zinc, they are crucial for maintaining strong bones and may help prevent osteoporosis.
Blood Sugar Control: Their low carbohydrate and high protein and fat content help regulate blood sugar levels, making them a beneficial addition for those with diabetes.
Antioxidant and Anti-Inflammatory Effects: Sesame seeds contain potent antioxidants like sesamin and sesamol, which fight oxidative stress and reduce chronic inflammation in the body, potentially lowering the risk of conditions like arthritis.
Immune Support: They provide essential nutrients such as zinc, selenium, and iron, which are vital for a robust immune system.
Hormonal Balance: They contain phytoestrogens, plant compounds that can help manage symptoms of menopause in women.
Skin and Hair Health: The zinc and vitamin E content contributes to maintaining skin elasticity and promoting healthy, strong hair. Sesame oil is also used topically for skin and hair nourishment.
Ragi, also known as finger millet or nachni, is a nutrient-dense ancient grain with a wide range of culinary uses and significant health benefits. It is particularly valued as a gluten-free alternative to wheat and rice.
