Today, I will show you how I make my Doner meat for kebabs and how to make a homemade doner kebab with tender, spiced lamb that's been slow-cooked and sliced thinly. The garlic mayo is rich and creamy, adding a savoury kick, while the tomato ketchup mint sauce brings a refreshing, tangy contrast. All wrapped up in warm pita or flatbread with fresh veggies, it’s a perfect blend of flavours and textures. Perfect for satisfying those kebab cravings!
The term "doner" comes from the Turkish word döner, which means "rotating" or "turning." This refers to how the meat is traditionally cooked on a vertical rotisserie, where it slowly turns as it roasts, allowing the outer layer to cook evenly. Slices are then shaved off as needed, creating the signature thin, flavourful strips of meat we associate with doner kebabs. The method of cooking and the name have roots in Ottoman cuisine and have spread worldwide, making "doner" synonymous with this delicious kebab style.

Ingredients:
1 kg lamb mince (or a mix of lamb and beef mince)
1 medium onion, finely grated
4 cloves garlic, minced
2 tsp ground cumin
2 tsp ground coriander

1 tsp ground black pepper
1 tsp ground sumac (optional, for tanginess) https://amzn.to/3WEPCQK
1 tsp ground cinnamon
1 tsp ground oregano
1 tsp salt
½ tsp cayenne pepper (optional, for heat)
50 g breadcrumbs
1 egg (optional)
Garlic Mayo Sauce
Ingredients:
1 cup mayonnaise (store-bought or homemade)
4 cloves garlic, minced
1-2 tbsp lemon juice (adjust to taste)
1 tsp Dijon mustard (optional, for extra flavour)
1 tsp white vinegar - I used apple cider vinegar
½ tsp salt (adjust to taste)
¼ tsp ground black pepper
1-2 tbsp plain yoghurt or sour cream (optional, for creaminess)
Fresh parsley, finely chopped (optional, for garnish)
Tomato Ketchup Mint Sauce
Ingredients:
1/2 cup tomato ketchup
2 tbsp fresh mint leaves, finely chopped (or 1 tbsp dried mint) 1 tbsp Colmans mint sauce
1 tbsp lemon juice
1/2 tbsp white vinegar - I used apple cider vinegar
1 tbsp plain yoghurt (optional, for creaminess)
1/2 tsp ground cumin
1/2 tsp ground coriander
1/2 tsp sugar (adjust to taste)
Salt, to taste
Freshly ground black pepper, to taste

Preheat your air fryer oven to 160°C (320°F). https://amzn.to/45zYrz4
Preheat the Oven to 180°C (360°F).
Bake, covered for 45 minutes, turning halfway.
Remove foil and bake at a higher temp to brown (optional)
