This Soup is a MUST!

WE LOVE THIS SOUP! I have made soups on the channel all month, but this one is definitely on our list of favorites. We are also enjoying the leftovers of the Secret Ingredient Chili I mentioned several times in this video. Here is the link if you missed it.

And here is the recipe for the best Tomato Soup EVER!
Ingredients:
1 medium white onion, diced.
6 Tablespoons butter
1 14 oz can diced tomatoes
1 14 oz can diced fire-roasted tomatoes
1 46 oz V-8 Juice or tomato juice
3-6 Tablespoons sugar
3 chicken bouillon cubes or 3 tsps chicken Better Than Bouillon
Fresh ground black pepper
1 cup sweet sherry (optional)
1 1/2 cups heavy cream
1/4 cup chopped fresh basil (optional)
1/3 cup chopped flat-leaf parsley
Directions:
Melt butter in a large pot or Dutch oven. Toss in diced onion and cook till translucent. Add the diced tomatoes (both cans) and stir. Add V-8 juice. Add sugar to taste (it helps combat the acidity of the tomatoes). I used 5 tablespoons.
Next, add the chicken bouillon along with lots of pepper.
Stir to combine and heat everything to almost a boil. Turn off the heat.
Add sherry and stir in heavy cream. Add herbs just before you serve.
I blended the soup because I don't care for tomato chunks (using an immersion blender).
Enjoy with a grilled cheese sandwich or just a slice of bread. It will be your favorite too!
