EASY PORK BELLY ADOBO RECIPE
Pork Adobo is a rich, satisfying, and iconic stew considered by many to be un official national dish of the Philippines.
ADOBO is a definition of Filipino comfort food. It is traditionally serve piping hot over mounds of freshly steamed white rice, allowing the rich pungent sauce to soak into very grain. It is a dish better the next day, as the flavors continue deepen overnight.

Ingredients of Pork AdoboRecipe:
2 kilos of pork belly
soy sauce
salt and pepper
vinegar
garlic & onion
3 bayleves (dahon ngLaurel)
salt and sugar to taste
peppercorn (pamintang buo)
Instruction:
1. Marinate the pork: In a bowl, combine pork belly with soy sauce, vinegar, garlic, onion, peppercorn and bayleaves. Ensure the pork is well coated. Marinate in the ferigerator for atleast 30 minutes or preferably 2 to 4 hours for a deeper flavor penetration.
2. Sear the pork: Heatcooking oilon a karge wok over medium high heat. Remove the pork from the marinade and sear the pork.Searing Pirk adds a rich, caramelized flavor to the adobo.
3. Simmer in marinade: Pour the reserve marinade into a pot with the seared pork. Add water, bring to boil, then reduce heat to low, cover and simmer for 1 hour, or until the pork is tender.
4. Adjust the flavor: Taste the sauce and adjust seasoning. Add salt as if needed and sugar to balance the acidity of the vinegar.
5. Serve hot with steamed rice.
