Hey guys! Welcome to my channel, today we are making fresh strozzapreti pasta with a spare rib ragu. This was my first time making the Strozzapreti shape but I found it super beginner friendly. If you have never made hand rolled pasta, I would recommend you start with this one! Making fresh pasta can seem pretty daunting but I promise that it isn't that difficult. enjoy!
The recipe for the Spare Rib Ragu is from the Barbuto Cookbook by Jonathan Waxman and the recipe for the pasta and technique is from Evan Funke's American Sfoligno.
Spare Rib Ragu:
2 racks pork ribs
1 tsp/4g kosher salt
1 tsp/2.5 ground cumin
1 tsp/3.5g black pepper
1 tsp/3g smoked paprika
1 onion
3 cloves garlic
2 cups(480ml) red wine
2 bay leaves
parmigiano reggiano TT
2 tbsp butter
Strozzapreti Pasta Dough
227g 00 Flour
112.5g room temp water
