The Easiest Chicken Alfredo || Cook in under 30 minutes!

Ingredients (serves around 5 portions):
600g chicken fillet pieces (diced chicken is fine too)
Seasonings:
1 tsp salt
1 tsp black pepper
1 tsp chilli flakes
1 tsp cajun
1 tbsp dark soy sauce
1 tsp dried parsley
2 small red onion (diced)
1 tbsp cloves minced garlic
400ml fresh double cream
2 tbsp cream cheese
1 handful chopped fresh spinach
2 cup cheddar cheese
350g tagliatelle pasta
Garnish in parsley
Seasonings for the sauce:
1 tsp salt (to your taste)
1 tsp black pepper
2 tsp cajun
2 tsp mixed herbs
Method:
Add your chicken to a bowl and season with the following spices listed above. You can always season your chicken however you like it!
In a non stick pan, add some olive oil (around 3 tbsp’s is fine) and add the chicken in. Sear the chicken on a medium/ high heat on each side for 5 minutes. After you’ve done this cover the chicken with a lid and cook on a low heat for 10/15 minutes and it will cook through.
Once the chickens cooked, set aside and cover with foil (this makes the chicken very moist and perfectly soft before serving)
In a separate non stick pan add in 3 tbsp’s of olive oil and 1 heaped tbsp of butter. Allow it to melt on a medium/ high heat.
Add in the chopped onions and sauté for 3/5 minutes on a high heat.
After this add in 1 tbsp of minced garlic. Cook for an additional few minutes.
On a low heat add in the 400ml of fresh double cream and turn the heat to low. Season the sauce with 1 tsp salt (to your taste) 1 tsp black pepper 2 tsp cajun and 2 tsp mixed herbs.
Next add in 2 heaped spoons of cream cheese, I used philadelphia followed by a handful of chopped washed spinach. Once the spinach starts looking like you only add in one piece add in 2 cups of mature cheddar cheese (or any cheese you like) and allow to melt
Next all you need to do is add in the boiled tagliatelle pasta followed by the cooked sliced chicken and garnish in parsley :)
