📖 Welcome to my kitchen! Let’s try to recreate my favourite pho at home.
IngredientS
2 star anise
1 cinnamon stick
1 cardamom pod
½ tsp cloves
2 tbsp fennel seeds
2 tbsp coriander seeds
Broth
1 pack beef bones
Beef brisket or beef shank
1½ tbsp sugar
Salt, to taste
Fish sauce, to taste
Noodles & Toppings
Rice noodles
1 large onion
1 large ginger
Bean sprouts
Cilantro
Green onions
Thai basil
Lime wedges (for serving)
Steps
1. In a large pot, add water, beef bones, and beef shank. Bring to a boil and cook for 5 minutes.
2. Drain and rinse the bones and beef well under cold water.
3. Char the onion and ginger.
4. Lightly toast all the spices in a dry pan until fragrant.
5. Add the cleaned bones, beef shank, and sugar to a large pot. Fill with cold water, enough to cover the ingredients.
6. Add the charred onion, ginger, and toasted spices.
7. Bring to a boil, then immediately lower the heat to a gentle simmer.
8. Simmer for 2 hours, skimming off foam occasionally. Remove the spices at the 1-hour mark.
9. Season the broth with salt and fish sauce to taste.
10. Cook the rice noodles according to the package instructions. In a bowl, add the cooked noodles and toppings: bean sprouts, Thai basil, green onions, cilantro, and beef. Pour boiling hot broth over everything.
11. Finish with a squeeze of lime juice and enjoy.
