This recipe is loaded with flavour and texture—Chinese sausage, fish cake, sambal, and chives all come together in a perfect wok-tossed harmony.

🍽️ Ingredients:
• 1 pack (450g–500g) fresh Kway Teow (flat rice noodles)
• Chicken and prawns (or shrimp)
• Garlic and shallots
• Chinese sausage (lap cheong)
• Fish cake (sliced)
• Eggs
• Bean sprouts and chives
• Dark soy sauce, light soy sauce, oyster sauce
• Salt, sugar, pepper
• Sambal paste (or chili sauce)
• Water or stock for gloss
• Optional: Pork lard and fish sauce for extra depth

1. Heat oil in a wok over high heat; sauté garlic and shallots until fragrant.
2. Add chicken, prawns, and Chinese sausage; stir-fry until just cooked.
3. Toss in fish cake, bean sprouts, and chives.
4. Add noodles, soy sauces, oyster sauce, and sambal. Mix thoroughly.
5. Add water or stock to loosen and create gloss.
6. Stir-fry over high heat until noodles caramelize slightly.
7. Serve hot with fresh chilies or lime for extra zing!
