Almond Cherry Bread
1/4c butter, soft
1c granulated sugar
2 large eggs, room temperature
1tsp vanilla extract
3/4tsp almond extract
1 1/2c flour
1tsp baking powder
1/2tsp baking soda
1/2tsp salt
3/4c sour cream
1c frozen tart or sweet cherries pitted
Glaze
1c powdered sugar
2TBL milk or hot water
1/4tsp almond extract
Sliced almonds for top of bread, optional
Preheat the oven to 375°. Degrees
Grease a 9 x 5“ loaf pan or 3 mini loaf pans and set aside.
In a large bowl, cream, the softened butter and granulated sugar together until light and fluffy.
Beat in the eggs, vanilla extract, and almond extract. Then set aside.
And a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
Add half the dry ingredients to the wet, and fold in.
then add the sour cream and fold in and finally then add the last half of the dry. And fold that in together.
Lastly, add the frozen cherries in and fold until just mixed in.
Pour the batter into the prepared loaf pan or the mini loaf pans and place in the oven.
Bake on 375 for 20 minutes, then reduce the oven temperature to 350° and bake for an additional 30 to 40 minutes until the loaf springs back when lightly touched or toothpick comes out clean.
After it’s done, let it cool in the pan approximately five minutes before removing it to a wire rack to cool completely.
To make the glaze whisk together the powdered sugar, milk and almond extract until it is smooth. You may sprinkle almonds over the top, but I would toast them in a skillet over medium heat until they are slightly browned before you put them on the top of the loaf.Drizzle the glaze over the top of bread and enjoy.
