茶餐廳系列3,終於到沙嗲牛肉麵啦!嘩,有別於出面的沙嗲牛,今次我做個昇級版,用XO 醬代替了沙茶醬,好味指數再升級。今次,我會教大家用很簡單的方法就能調到超水準的沙嗲牛肉。
今次我又介紹好用的醬料啦!
所以李錦記的醬料就幫到手,現在李錦記的產品在各大亞洲超市

XO 醬沙爹牛肉麵
2 人份
材料
牛腹肉 180克
即食麵(麻油味)2包
紅蔥頭(切碎) 1個
薑蓉 1茶匙
蒜蓉 1茶匙
李錦記 XO 醬 2湯匙
醃料
1湯匙 李錦記特級鮮味生抽
1茶匙 李錦記特級老抽
糖1.5茶匙
生粉 2茶匙
水3-4湯匙
油 2湯匙
白胡椒粉 少許
醬汁材料:
李錦記沙爹醬 4湯匙
花生醬 1湯匙
李錦記特級鮮味生抽 1湯匙
糖 ½ 湯匙
水 150毫升
烹飪步驟
1. 將牛肉切片與醃料拌勻,備用。
2. 中大火燒熱油,加入牛肉片快速兜炒,取出。
3. 於同一鍋,多加少許油,下薑蓉、蒜蓉、紅蔥頭碎以中火炒至軟身,再下XO 醬攪拌炒香,注入醬汁材料,煮沸。
4. 此時加入牛肉後熄火拌勻,即成XO 醬沙爹牛肉 。
5. 按照包裝上的指示煮熟即食麵
6. 將沙爹牛肉和醬汁倒在即食麵上,即可享用。
Satay Beef Noodles with XO Sauce
Serves 2
Ingredients
180g Flank steak
2 packs Instant Noodles (sesame flavour)
1 Shallot, finely diced
1 tsp Ginger, grated
1 tsp Garlic, finely diced
2 Tbsp Lee Kum Kee XO Sauce
Marinade
1 Tbsp Lee Kum Kee Premium Light Soy Sauce
1 tsp Lee Kum Kee Premium Dark Soy Sauce
1.5 tsp Sugar
2 tsp Corn Flour
3-4 Tbsp water
2 Tbsp Cooking Oil
A pinch of White Pepper Powder
Sauce Mix
4 Tbsp Lee Kum Kee Satay Sauce
1 Tbsp Peanut Butter
1 Tbsp Lee Kum Kee Premium Light Soy Sauce
½ Tbsp Sugar
150ml Water
Method
1. Slice the beef and mix it with the marinade ingredients. Set aside.
2. Heat oil in a pan over medium-high heat. Add the marinated beef slices and stir-fry quickly. Remove the beef from the pan."
3. In the same pan, add a little more oil. Sauté the ginger paste, garlic paste, and minced red onion over medium heat until softened. Then add the XO sauce and stir-fry until fragrant. Pour in the sauce ingredients, bring to a boil.
4. Add the beef back in, turn off the heat and toss everything together. The XO sauce beef is now ready.
5. Bring the water to a boil and cook the instant noodles according to the packet instructions.
6. Pour the XO sauce beef and its sauce over the instant noodles, and it is ready to enjoy.
