These bunny shaped salted egg custard Mooncakes are made with a cookie crust and salted egg custard filling. Each bite releases the fragrant scent of the salted egg custard, accompanied with the buttery, crumbly skin. This mooncake crust is more similar to a cookie crust than the traditional mooncake crust with lye water and golden syrup. Hope you like it! 😊
Ingredients: 金沙奶黄酥月饼材料:
For 8 mooncakes 可做8个月饼
Mooncake filling: 金沙奶黄馅:
~2 salted egg yolks ~2个咸蛋黄
~25g caster sugar ~25克细砂糖
~9g Cake Flour ~9克低筋面粉
~9g Milk powder ~9克奶粉
~35g coconut milk + 10g water= total 45g ~35克椰浆+10克水=一共45克
~ 5g evaporated milk ~5克淡奶/淡炼乳
~15g egg ~15克鸡蛋
~10g condensed milk ~10克炼乳
~22g unsalted butter ~22克无盐牛油
Mooncake skin: 饼皮:
~100g unsalted butter ~100克无盐牛油
~30g icing sugar ~30克糖粉
~1 egg yolk ~1个蛋黄
~130g cake flour ~130克低筋面粉
~20g corn starch ~20克玉米淀粉
~15g milk powder ~15克奶粉
