In today's video I am going to be sharing with you my healthy summer meal prep. All of these meals are super easy to prepare and they are PACKED with flavor! Instant pot chicken:
-Place metal rack at bottom of instant pot
Pour 1/2C of chicken stock
-Place chicken on metal rack and season well! I seasoned with salt, pepper, paprika, garlic powder, kickin chicken seasoning, 2T of fresh garlic, and juice of one lemon. Make sure to season both sides! Then pour an additional 1/2C of chicken stock on top of chicken.
-Pressure cook for 12 minutes and release steam when done!
Brown rice:
I used my rice cooker to cook! I linked it above :) I used 3 Cups of washed brown rice and 6 cups of liquid ( 4C chicken broth and 2C of water).
Sweet potatoes:
-Wash and chop up in even cubes.
Place on a baking mat (linked above) or parchment paper. Season with olive oil, salt, pepper, paprika, and garlic powder,.
Bake for 30-40 minutes making sure to toss at the half way point at 425 degrees
Veggie Tray:
-Place 1 chopped red onion, broccoli, and zucchini on a baking sheet with baking mat.
Season with olive oil, salt, pepper, paprika, garlic powder, and veggie seasoning!
-Roast at 425 degrees for 25 minutes or until veggies are soft and slightly crispy (make sure to toss at the half way point)
Over night oats:
1/3 cup of rolled oats
1tbsb of chia seeds
1/4 cup of greek yogurt
1/4-1/2 cup of almond milk ( I used 1/2C but if you want to be able to fit fruit in the jar as well do 1/4C)
Top with fruit of choice! I love doing different combos :)
Energy Balls:
-1C of rolled oats
-1/3C maple syrup
-1/2C shredded coconut
-1/2C chocolate chips
-1/2C ground flaxseed
-1/2C of nut butter (I used peanut butter)
1t of vanilla extract
-Mix all ingredients well. Scoop the dough with a cookie scoop (so they are evenly shaped) and roll them into balls! If the dough is too dry you can add some more maple syrup or a splash of water. If it is too sticky you can place in the fridge for 30 minutes
Place on a baking sheet lined with parchment paper and freeze for at least 30 minutes
Store in an airtight container on counter for 3-4 days or in the fridge for up to 7 days. You can also store in freezer as well for a long shelf life.
