For a really thick foam try this trick and whip the egg white with an immersion blender. (You could of course just dry shake it really hard and long.) If you do use the immersion blender don’t try and strain it with a hawthorn strainer though, the thick foam will get stuck and not make it into the glass. And you don’t really need to strain it again since we already strained out the ice, so just go ahead and dump the whole thing in the glass.
INGREDIENTS
1 Kiwi
15 ml (½ oz) lime juice
45 ml (1 ½ oz) white rum
15 ml (½ oz) Midori
15 ml (½ oz) simple syrup
1 egg white
