Lotus Stem (Kamal Kakdi) Curry
1. First, peel the lotus stem and cut it into slices. Boil the slices in water for 15–20 minutes until tender. Once done, rinse them well and set aside.
2. Heat oil in a wok (kadhai). Add cumin seeds, chopped onion, green chilies, and garlic paste. Sauté for a few minutes until the onions turn golden.
3. Add chopped tomatoes, salt, and sabzi masala (mixed vegetable spice blend). Stir well.
4. Mix in the boiled lotus stem slices. Add a little water, cover, and cook until the curry thickens and the flavors blend.
5. Once the water reduces and the oil separates, garnish with fresh coriander leaves.
Your delicious Lotus Stem Curry is ready to serve.
