How to make Lobster Bisque with no Lobster?!!!

Lobster bisque
5-6 servings
Better than Bouillon lobster base (Must Have)
1 onion
3 stocks of celery
3 sticks of carrots
3tbs butter
3-5 cloves of minced garlic
5 cups of water
3/4-1 cup heavy cream
Grape seed oil
1 cup of white wine (I used Barefoot Sauvignon blanc)
3tbs of tomato paste
Garlic butter croutons
BISQUE
1. Heat butter and oil in a large, heavy-based pot over medium heat, Sweat the onions, carrots, celery. Cook until soft, about 5 minutes. Season with salt and pepper. Stir in cloves of minced garlic and cook until fragrant, about 1 minute.
2. Mix in tomato paste, cook for 2-3 minutes to coat vegetables.
3. Pour in wine, simmer and let reduce to half. Pour in 5 cups of water, then add 5-6 tbs of better than bouillon lobster base.
4. Reduce heat and gently simmer while stirring occasionally, until liquid has thickened slightly and flavours have blended, about 30- 45 minutes.
5. Take off the heat, transfer mixture to a blender and blend until smooth. Alternatively, purée with an immersion blender until very smooth. Return to medium-low heat and stir in heavy cream.
