Sweet sugar contains mainly two molecules, namely, glucose and fructose. If the amount of glucose in a honey is higher than that of fructose, then that honey becomes granular very quickly. Again honey has enough pollen and bubbles but that honey is easily granulated. The amount of glucose and fructose in honey is the same. Generally fructose is 30-44% and glucose is 25-40%. Some honey is completely frozen (mustard flower honey). Some honey has a crystal at the bottom and a layer of liquid at the top, while some honey may not crystallize.
