You have to be considered a specialty restaurant. We call this a niche. A niche is filling a specific need for your customers and its essential to long-term success for any restaurant.
If someone is asking 10 people in the office what they should order for lunch... they won't throw around names. Instead they will say "What sounds good today? Do y'all want sandwiches, chicken, burgers, pizza? We will pretend the group all agrees on sandwiches.... next, they will toss around names. "How about Subway, Panera Bread, Firehouse subs, the great little hometown deli around the corner..."
A restaurant that tries to cater to everyone, attracts no one.
