Bánh Canh is one of my favorite childhood foods. I remember waking up as a child to the fragrant smell of fried shallots and green onions paired with a savory pork broth. Bánh Canh is one of the simplest and purest of all the Vietnamese noodle soups.Who wouldn't enjoy a bowl filled with thick noodles in a rich and savory pork broth? Well, here is my twist and take on Bánh Canh. Disclaimer : The only tricky thing with Banh Canh is keeping the darn slippery noodles on the spoon!
Garnish:

Chili garlic sauce (Sambal Oelek)

Fried Shallots

1 Large Yellow Onion
2 Ginger Slices
