This bhindi masala is easy to make and tastes just like restaurant-style sabzi.
Perfect for lunch or dinner with roti, paratha or steamed rice.

Step-by-Step Recipe:
Wash & pat dry bhindi well — no moisture!
Cut into medium pieces.
Heat oil in a pan.
Add bhindi & fry till light golden.
Remove & keep aside.
In the same pan, add 1 tbsp oil.
Add cumin seeds & let them splutter.
Add chopped onion & sauté till light golden.
Add ginger-garlic paste — cook for a minute.
Add turmeric, coriander powder, red chilli & salt.
Mix well.

In a bowl, whisk curd with 1 tbsp besan (gram flour).
Add a little water & mix till smooth.

Now add the curd mixture to the pan on low flame.
Stir continuously — don’t let it curdle.
Cook till it turns creamy & thick.

Add fried bhindi & mix gently.
Cover & cook 4–5 minutes on low flame.

🍃 Sprinkle garam masala & kasuri methi.
Mix once & turn off the flame.
