Super Soft Alphonso Mango Cake Recipe | Gluten-Free KETO Mango Cake | Easy Almond Flour Mango Cake

Here is my Keto Mango Cake with merely 3 net carbs per serving. When Mango season is here, it is a big part of Indian culture to enjoy mangoes when they are in season. Mango is a seasonal fruit that is found in April and May, merely for a couple of months. And it is part of the Indian culture to buy mangoes by the dozen and enjoy them. It is the most expensive fruit in India and Alphonso variety is considered to be the king of mangoes.

My in-laws have a large mango tree and it gives us about 500 to 700 mangoes each year. We get them from there and enjoy them. This year we got one lot but, the recent storm wreaked the farm. Anyway! I cheat on my diet to eat mangoes. But this recipe is not a diet cheat. It fits into the definition of a keto recipe. It is only 3 net carbs per serving. It is a gluten-free mango cake for those who are allergic to gluten. Can it get any better?

1/4 cup + 2 Tbsp Erythritol
1/3 Cup Vinegar
1/3 Cup Butter
1 Cup Almond Flour
2 1/2 Tbsp Coconut FLour
1/2 tsp Baking Powder
1/2 tsp Baking Soda

--Mango syrup
1/2 tsp Gelatine
2 tsp Water
100 gm Mango

--Frosting
3/4 Cup Cream Cheese
1/4 Butter
2 Tbsp Erythritol
10 drops Stevia concentrate
