How To Do Basic Healthy Sourdough Bread With No Kneading Method (Sourdough 101)/ 如何制作无需揉面法又健康的基本酸种欧包

There are many ways of making sourdough bread. In this video will show you the easy way of doing sourdough bread without using any electric mixer and without doing any kneading method. And the ingredients are very simple, only 4 ingredients.
Ingredients :
100g starter
200g water
300g bread flour
5 to 15g salts
Method :
1. Mixing all ingredient in a mixing bowl.
2. Let it rest for 60 minutes.
3. Testing the gluten structure (usually is pass).
4. Doing starching and folding for 3 to 4 sets, each sets is 4 times, interval is 20 minutes.
5. After the last set, let it rest for 20 mins.
6. Now can do the shaping (just follow the steps from the video).
7. Let's it proofing in the refrigerator for 8 to 12 hours, or 24 or 48 hours also can.
8. After the proofing time, can remove from the proofing basket. Doing a line scoring. ( see the video)
9. Then send for baking, preheat the oven 250c for 30 minutes, bake for 250c for 15 to 20 mins then change to 200c for 15 to 20 mins. Each oven is different timing. Trying to understand your oven well, if not, the dough is easy to burn.
Note : you need to have a very strong and active levain. So that, the healthy sourdough bread will be nice.
