Happy Thanksgiving! I'm excited to walk you through the recipes I made for my family's Thanksgiving meal. First up is rough puff pastry from Claire Saffitz's book Dessert Person. This was the foundation for the Apple Tart I made, which will be covered in my next video.
I had to remake the pastry because the first time I over-hydrated the dough. It was tricky for me to know how much water I should add, so I hope this video will give you the visual cues to not fail at your first attempt like I did. That said, this is a pretty simple technique and a great foundational recipe to have in your back pocket.

ROUGH PUFF PASTRY
Ingredients:
3 sticks unsalted butter (12 oz / 340g), chilled
3 1/2 cups all-purpose flour (16 oz / 455g), plus more for rolling
2 tablespoons sugar (0.9 oz / 25g)
1 1/2 teaspoons Diamond Crystal kosher salt (0.16 oz / 5g)
