京醬肉絲|超級下飯料理!Shredded Pork with Sweet Bean Sauce

食材
豬後腿肉絲-300g、蔥絲-30g
醃漬
蛋白-1顆、白砂糖-1/2茶匙、白胡椒粉-1/4茶匙、醬油-1茶匙、米酒-1湯匙、太白粉-2湯匙、食用油-1湯匙
調味
香油-1茶匙、甜麵醬-2湯匙、白砂糖-1湯匙、醬油-1/2茶匙、白胡椒粉-1/4茶匙、米酒-1湯匙
步驟
(1) 將豬後腿肉以逆紋切片,再以逆紋切絲。將肉絲與蛋白、糖、白胡椒粉、醬油及米酒拌勻,靜置10分鐘後,與太白粉拌勻至黏稠,再與食用油拌勻。
(2) 中火熱鍋,倒入1湯匙的食用油,放入肉絲拌炒至上色後,起鍋備用。
(3) 小火熱鍋,倒入1茶匙的香油,放入甜麵醬及糖拌勻,再放入醬油、白胡椒粉及米酒拌勻。
(4) 放入拌炒好的肉絲,轉大火迅速拌炒至醬汁收乾,約1分鐘。將肉絲與蔥絲一同擺盤即可。

Ingredients
300g pork loin or pork fresh ham, 30g green onion (cut into julienne)
Marinade
1 egg white, 1/2 tsp sugar, 1/4 tsp ground white pepper, 1 tsp soy sauce, 1 tbsp rice wine, 2 tbsp potato starch, 1 tbsp cooking oil
Seasoning
1 tsp white sesame oil, 2 tbsp sweet bean sauce (甜麵醬), 1 tbsp sugar, 1/2 tsp soy sauce, 1/4 tsp ground white pepper, 1 tbsp rice wine
Instructions
(1) Cut the pork into thin slices, then cut into shreds. Transfer the pork shreds to a mixing bowl. Add egg white, sugar, ground white pepper, soy sauce and rice wine, mix well, then let it rest for 10 minutes. Add potato starch and mix well, pour the cooking oil and mix well.
(2) Heat the pan over medium heat, pour 1 tbsp cooking oil, add the pork shreds and stir fry until cooked, then set aside.
(3) Heat the pan over low heat, pour white sesame oil, add sweet bean sauce and sugar, stir well. Add soy sauce, ground white pepper and rice wine, stir well.
(4) Add the pork shreds, turn to high heat, stir fry for 1 minute. Place the pork shreds and green onion on the plate, enjoy!
